Tonight I made this...

Lobster Benedict with homemade spicy Hollandaise sauce.

For sure one of the top 5 meals I've ever had. I think I can hang up my cook hat now and find something else to do, that is if I survive the cardiac arrest from two days of insane butter intake! :D

I smoked a Turkey breast and roasted some root veggies. Was a bit hectic due to a client being hospitalized and having to deal with picking up her dogs and all the food and meds etc, while dealing with another clients cat sitting and waiting for another boarder to be dropped off here. Smoking the breast came second but I still managed to pull off one of the best turkey meals I've ever had!

No it's not raw, it started to develop a nice smoke ring! Brined in brown sugar, sea salt, lemon zest, rosemary, black pepper and vegetable stock for 6 hours. Smoked with hickory soaked in orange juice and hardwood lump coals really slow for 4 hours. Came out tasty, nicely smoked, super juicy and tender!

First, :ha:.... the real smokers would know silly! The smoke looks good, the orange juice is a good choice.

Have you tried rum or bourbon soaking the wood? if not, try it out the flavor is deep, plus any left over liquor you can just swig it! :D

Since All Saints Day has passed, I bet your picking the olives now... The Sibenik-Knin region is a great place, been there and I was in Olive heaven..

What types of olives do you grow? and how do oyu prepare them?

We grow mostly "Oblica" variety and its Olive for Oil production but can be well prepared for food also. U can find more here:

was there in 2010 before joining the board, but we plan to go back again on a cruise in the near future, i'll let you know and we can try to connect.

Thanks for the link, the saylor olives look great and the sea salt is great, I use/have 12 different varieties of salt I use them in dessert too, awesome flavor too.

You're lucky on the labor help, I cannot seem to get my Rottweilers to earn, work, or plant, but they can eat, drink, and Sh@# well .. :ha:

Belle (Pisang Awak), courtesy of Jon. Probably some of the best bananas I've ever tasted. The only thing that could compare was this one type I had in Costa Rica, which I have no idea what it was. They're reminiscent of Manzanos from the supermarket, but sweeter and creamier with a bit less of an apple taste. Although they had a pithy core. I might want to let them ripen a bit more.

Here's where I stand now, the banana varieties I've eaten out of hand, from best to worst:

Pisang Awak
A small, slender type I had in Costa Rica, not sure what it was
Store-bought Oritos
Store-bought red bananas
Store-bought Manzanos
Store-bought Cavendish
Veinte Cohol
Store-bought Burro bananas (Orinoco)

Yellowtail steak that included some serious fatty belly is marinating and will be pan seared with a black pepper crust, mashed potatoes and baby spinach salad.

I'm staring at darkening plantains to cook this afternoon. Already baked crescent rolls with nutella or cheese in them for lunch.

Edit:
Fried yellow/black plantains with some sugar. Tasty but not superb. Nice banana flavor but not a cooked banana flavor so it was tasty and not icky. The sugar got too chewy/hard to be pleasant to the mouth. I have more to experiment with though. I think if I can fix the sugar caramelizing issue, it would be very very good to have with ice cream to smooth it out.
