With my basjoo, which is the only banana I've chopped up, the sap rapidly oxidizes to black (it also stains). Same goes for the corm cuts. Black doesn't automatically mean rot. If it's squishy then...

You didn't damage the plants by cutting them back too soon. the growth point is in the corm, you could essentially cut the whole pstem to the ground and it'll still pop right back up in the spring....

If it is still pushing leaves then it should be ok. Keep the corm dry. In my experience, when the rot is visible, it may be too late to do anything about it. How are the roots? are they healthy?...

It's a rhizome... basically a big subterranean stem that eventually sprouts a new plant.

These are Musa 'Mekong Giant' rhizomes but they look very similar to what you have.
