You didn't damage the plants by cutting them back too soon. the growth point is in the corm, you could essentially cut the whole pstem to the ground and it'll still pop right back up in the spring....

If it is still pushing leaves then it should be ok. Keep the corm dry. In my experience, when the rot is visible, it may be too late to do anything about it. How are the roots? are they healthy?...

At that size you may have some issues keeping it alive over the winter. It might just dry out. I'd put it in a pot with some nice potting soil and keep it as a houseplant. Don;t remove the pups. They...

It's a rhizome... basically a big subterranean stem that eventually sprouts a new plant.
These are Musa 'Mekong Giant' rhizomes but they look very similar to what you have.
