Mine never take more than 6 months so it's probably fine. They look pretty plump. It wouldn't hurt to wait until at least 1 is obviously yellow. You probably won't go wrong either way.

I would not do it during flowering. After the male phase begins, OK. Any stress during flowering affects fruit size and quantity.

For me they are always 6 months. Unless it is a massive bunch it looks like it will touch the roof but should fit or just cause the plant to lean some to accommodate the growing bunch. Congrats!

California Gold plants never display red splotches. I'd guess that both of yours are Dwarf Cavendish.

Being in Anaheim I would suggest you try something other than California Gold anyways.
