I harvested this bunch of Cardaba the other day, and they are starting to ripen now. So far, it seems to be a very meaty and chewy banana with good flavor but not that sweet.

Holy moly that looks good! If I'd known you were going to make that, I'd have found an excuse to stay around for dinner!
Thanks again for your generosity with all the different produce! I already ate one of the guavas (it was excellent) as well as a couple of the figs. The figs were also very good. What variety are they? You've done some beautiful landscaping. Your place is really impressive. Nice work. |

Clare, I think they are not quite ripe enough yet. I cooked some as "maduros" last night and they were still very starchy and a little bit bitter (like a green Cavendish). I think they need to be really ripe, like with some black on the peels if you want to cook them in a way that they'll be sweet.
Or you cook cook them green as tostones, but I think it is too late to do that with the ones that have already gone yellow. Anyone with experience cooking Saba/Cardaba want to weigh in? I don't really know much about cooking bananas. |

One bunch of my "unknown" type bananas. I let an entire hand turn yellow before I Harvested them. They are not as productive as SH 3640. The fingers are much smaller and average only six hands.
