I did some quick research and most sources say not to pile on too much grass clippings as it can be detrimental to it composting correctly... but these are bananas we're talking about. How much do you stack? As much as you can give?
If the grass is piled too thick it can cause matting which is not good. I apply everything that is mowed. When I first started out I piled it on thicker and in my environment it didn't cause any issues. Maybe 3"-4". I apply across the whole area that I consider the banana patch. Not just immediately around the plants.

Over the years my patch has expanded but the grass area has not so now each banana plant gets about 2 inches every ten-fifteen days depending on the rate and quality of grass growth. I've reached maximum sustainability of my grass clippings for my banana patch application. Haha.

Note: If your area gets plenty of rain and has a great deal of humidity organic matter breaks down quite quickly. Organic matter breaks down much slower in a dry area with little rain such as Arizona. So base the thickness on your areas ability to break down organic matter.
