Tacos were awesome, but the best part was finding an authentic Al Pastor pit on the way home. These are getting really hard to find because the city shuts them down as fast as they get popular enough to find them, which is usually because Jonathan Gold or some other foodie writes about them. So stoked! :)

It looks like you did a great job on it. The dome is a good cooking device to use. Some friend have used and rave about it. Hmm Brisket sounds good Have you ever brined any meats before? If not and you have tome try brining your meat for a day before cooking and it will be moist and flavorful even if you cook over 14hrs. You need some help with the mixture let me know. Have you made Pizza with it yet?

I have brined turkey .No pizza yet still need to get a stone

King Arthur makes a good Pizza stone and they have the best flour for pizza and any baked goods hands down. King Arthur Flour
