i'm sure someone will correct me if i'm wrong. i think it's the amount of water that's inside combined with color/size (maturity). the younger the sweeter/more water and the older the more meat/less water

You can tell the approximate age visually, but that's not really helpful. Each peduncle has many cocos of similar maturity, so as it's getting close to ready, you test one and keep track of the date. At the stage in the photo, the endocarp is soft and can be punctured with your finger. The flavor changes dramatically as the coco matures and it has different uses at each stage. Unless you can pick your own cocos, you'll probably never taste these.

Here's 3 lbs (about 2 gallons) of habaneros I harvested today. These peppers are from my 3 year old plant that did its all and expired this weekend. Not a lack of water or anything else - just completion of life cycle. It certainly did its best - not only in the quantity of peppers, but they are D*mn Hot!! I wouldn't use more than 1 per quart or 2 per gallon of salsa. Here you see them sitting in a large bowl, inside an oversize plastic bag before going into the refrigerator. In a day or two I'll sort and vacuum seal them for longer term refrigeration and freezing.

Mostly tomatoes and peppers and horseradishes.
1. Cherry tomatoes 2. Beefsteak tomatoes 3. Brandywine tomatoes 4. Jalapeno peppers 5. Green, orange, purple, and yellow bell peppers 6. Serrano chili peppers 7. Purira chili peppers 8. Banana peppers 9. Hungarian Hot Wax peppers. They are hotter than Jalapenos. 10. Long thin Cayenne peppers 11. Red Habanero peppers 12. Normal and Ruffled Pimento peppers 13. Horseradish roots It was a epic summer and we got too much so a lot has to be canned.

K. We picked more stuff today and this is some of the tomatoes and peppers - before and after the picking.
The Purira chili peppers. This picutre was taken a few weeks ago and now they are red. I have another picture of those. ![]() The Habanero peppers. They said they were red but they only turned orange so I think what we really got was orange Habanero seeds. ![]() The Hungarian Hot Wax peppers. The first ones really dench and they are all really hot - hotter than Jalapenos. ![]() ![]() The Long thin Cayenne peppers. We got tons of them. ![]() The peppers I picked today. I just tossed them all on the same plate except the Serrano, Purira, and Cayenne peppers. The Cayenne peppers are on the right side and the green Seranno peppers on that plate were from a plant that died so I picked them anyway. The second picture is a mix up of Serrano and Purira peppers. ![]() ![]() The last picture is some of the Apache blackberries that we picked last spring. There wasnt enough to can because its only the 2nd year but the canes are getting huge wo we should have a ton of them next spring yay. ![]() EDIT. I almost forgot the tomatoes. I didnt get very many pictures for my scrapbook but I shot these before I started picking. One of the Brandywine tomatoes. A few little bug holes because it was too close to the ground. ![]() A small Beefsteak tomato. We got lots of them. ![]() And some of the Cherry tomatoes. ![]()
