Default Best plantain banana Florida 9b?

Hey, so I'm not a huge fan of the traditional banana flavor, though I love cooked plantains. What varieties would everyone suggest for 9b which are more plantain-like, less grocery-store-banana type (I love the flavor of the first, really dislike what everyone considers banana flavor)?

Once I know the best varieties, if I can't find them locally, what is the best way to obtain them?

I like the taste of the Saba and they are pretty cold hardy. They are not too hard to find, ask around.

Thank you! I don't really know anyone who grows bananas ... I'm not sure who I would ask when I'm asking around. Can you suggest something more specific?
