Question Need To Learn More

We got some banana trees last year from a neighbor. The results were fantastic! 2 of the trees even produced bananas. The back yard looked like a tropical heaven! We were not sure how to winter them correctly. We dug up the first 2, they were very heavy to move, we left 2 in the ground and covered them with mulch, when we uncovered them they were mush., (which have now started over, and are about a foot tall. THe ones we dug up were put under the house as we were told. We have planted them but they are not doing so well. Were we supposed to cut them back and by how much?
We love our trees, there is a lot to learn, but we are willing. Please advise.
