Default Short Varieties that harvest longest

The only variety I've heard of that doesn't ripen all bananas at same time is the thousand finger banana. It seems to be one of the shorter varieties as well, but I cannot locate any source for it. Are there any other varieties that do not ripen all hands at the same time that aren't over 10 feet? We don't need 1000 bananas, but we can't eat 30 in a week either.
Or maybe someone can share a way to harvest a hand at a time and ripen them quickly off the tree.
If not, do the dwarf varieties that are 6 ft or 4 ft tall make smaller amounts of bananas?
