Mine do that when they've had a lot of fertilizer. Or when anything causes them to grow really rapidly. I wouldn't worry too much, but if they are coming out really pale, almost white, it might indicate a micronutrient deficiency.
BTW, it's probably not Blue Java. Hard to tell at this stage but it looks much more like "Namwah", which is sold as Ice Cream in much of the US.
