Thanks guys. 
I checked and the area under the mulch and it was very dry. I drug a water hose to them and soaked their roots good. Later in the evening after the sun was off them, I watered again and wet the leaves good as well.
They look much happier this morning, but still have the sun the burn. New leaves should cover that soon anyway if they keep growing like they have been. I'm gonna give them another good soaking this evening.
BTW. As for frying the leaves, LOL I have a neighbor that uses the banana leaves to wrap food in to cook.
