Default Pigeon Peas blooming - it must be Xmas time

As usual, when things start cooling down after summers heat, the pigeon peas start blooming. Must be why this guy appears in special holiday dishes throughout the Caribbean islands. My friends from India in Charlotte, NC and Trenton, NJ also made me aware of the importance of the Toor dal as a daily staple. They, however, prefer to use pigeon peas in the dried form rather than fresh as in the Caribbean.

Called Arroz con Gandules in Puerto Rico and Rice and Peas in Jamaica.
