Fufu
So I finally found a fantastic use for the plantains I have been putting up in the freezer. Fufu.
Sweet Plantain Stuffing - Cuban Fufu Recipe It is awesome, all the family liked it. It may permanently replace mashed potatoes in this house. I am going to try to make "plantain pancakes" I made some 4" patties out of the fufu and froze them. I'm gonna see how they fry up later this week.
