![]() OK...I have about four Saba in my yard. Two of them blossomed last December. I have been waiting for the fruit to turn yellow or for the birds and rats to attack them to know when they are ripe.(a failsafe indicator) Anyway nothing like that has happened yet. So today I decided, to heck with it, I'm gonna cut one down. I've read this copied blurb, "these make the best tosotones I've/We've ever tasted". OK, I am here to report, they do make EXCELLENT tostones, much more akin to "apim" or "macacheira" than to tostones as you might know them. But I guess, my question is...do they ever ripen? 6 months and no sign of ripening seems a little odd to me......

![]() I think Sabas are only cooking bananas, so my guess is that they never actually ripen. They taste good when boiled though!
......Edit... It turns out they can also be eaten raw, so Im not sure if they actually do reach ripeness or not, but Im going to guess that they do get ripe. I have only seen Sabas cooked though.
