I was only trying to be funny because there is not a lot of variety in wine itself. You could try blending wines, banana wine jelly, banana vinegar or may be a pickled ripe banana with wine.

I always wondered what wine made from jelly palm fruit would taste like! It’s a sweet but a little tart fruit! Excellent to make jelly! Also called a pinto palm!
Anyone ever hear of it being made?

I made some years ago, about early 90s (5 gal). It has an after taste that i didn't care for. ... BUT after a year, the taste went away and was a pleasant dry white wine. i have access to several 'jelly' palms but haven't made any more since. Best i remember, the berries contain a lot of sugar and i didn't have to add much, if any, additional sugar. ... I use a hydrometer and add sugar until I get a 14% content. This is usually about 10lb to 5 gal of 50/50 grape juice & water. Thus my wines are slightly dry.

Welcome aboard the Banana Express. ![]() If I had that many nanners to work with, I'd just make a nice banana mash and add some yeast. Put a little heat to it, run it through a thumper jug and get some good old fashioned panther piss, as we call it here in Appalachia.
