With Pitogo, when they are half ripe up to ripe stages, we usually just boil them. That way, they're easier to peel. It's all yellow, they're easier to peel as well, and we stick several of them in a barbecue stick, coat them lightly with brown sugar, and deep fry them - Voila! Banana-Cue! they are the perfect size for this.
