Mysore bananas are very common on Trinidad. They are not highly regarded; have no market value as whole fruit; and therefore are never stolen from fields.
Additionally, they are extremely disease resistant; tolerate or thrive under adverse conditions of soil and moisture; and the fruits are very flavourful.
I want to devise the making of a cheap medium quality wine out of them:
sweet, low alcohol, shortest preparation time; and with technology appropriate to a rural third world peasant community.
My experimentation is already underway... But... Can anyone please advise?
