Default Cassie's Dominican bananas

Hi folks and thanks for your welcome to the site. This is a pic of my most prolific and very sweet banana (variety unknown) taken about 6 weeks ago. They are now considerably larger and fatter and we are waiting to harvest them. I have had a problem in the past when I have cut them when green but very rounded. On hanging them the main stem goes black - is this because I am hanging them as they grow - instead of hanging them upside down? Also they ripen and are very sweet but never turn yellow, as they need eating before this occurs because of the stem blackening. I have asked locally but get 20 sorts of conflicting advice.

Thanks for the welcome Kylie - I have just taken some more photos and will post them asap. Just been waiting for the tropical downpour to stop but now the sun is shining again.
