Cabbage...

Cabbages of all varieties mature best during cool weather. You can grow Spring and Autumn crops where summers are hot. Sow seeds in flats 4-6 weeks before you intend to set out plants in the garden. Seeds take 7-14 days to germinate. Plant early maturing varieties or hybrids in the Spring; these mature from transplants in 7-8 weeks. Later maturing varieties, such as king size kraut cabbage, need 12 weeks to mature from seeds and should be planted after mid summer for autumn harvest.

When to Harvest: 50-100 days after setting out plants, before heads split or crack.

How to Harvest: Cut off heads.

How to Store: Keep cool and damp for 12-16 weeks. To preserve, freeze or dry.
