Cauliflower...

If you live where summers are hot and dry, set out transplants early enough so that you can harvest well before or well after the midsummer heat. Or plant in late summer or Fall, so heads will mature in cool weather.

When to Harvest: 55-100 days after setting out plants before buds open.

How to Harvest: Cut off heads.

How to Store: Keep cool and damp for 2-3 weeks. To preserve, freeze or dry.
