Default Cut Banana down for winter, growing back a week later!

I cut my banana tree off about a foot from the ground and buried it in mulch as we have cold winters in Kentucky. About a week after I cut it off it has grown 7 inches out of the pile of mulch! Is this normal? Should I cut it off again? We cut it down right before a 29 degree night, but then the weather got up to 80 degrees again a few days later. Just wondering whether I should leave it as it is or cut it off at the ground again ?
