When it gets cold out, they stop growing anyway. So you dig them up and put them away so they don't freeze. If you you store them where it's to warm they will try to grow again. So if you store them right, cool not cold, dark, they will store for months. Then when the weather warms you plant them back out. That is pretty much the nutshell version. I still have a lot to learn.
