Its late in the season to cut the plant back as it probably wont grow much more now...Having the leafs touch the top and fold back as they do doesnt hurt the banana and although it spoils the look,it still lets the banana have a big leaf area for photosynthesis. Seeing a few more of your pictures,I think that you have it ground planted but if not,what Dan said is a good solution too.
Cutting the leafs back to fit doesnt help the plant anywhere. Its just causing more damage than the bending of the leafs its getting from the top...
