Just keep them dryer during the winter, provide them with as much light and warmth as possible and remove any outside petioles that are dying/dead to get rid of any mushy parts. If worse comes to...

Sounds to me like over watering during the winter months. You have to remember that even in the tropics where native bananas grow, during the winter there is very little rain and they do not grow...
