Dang! Gabe .... That's always a mouthful to explain. You cover it all. ... Only I would also suggest daily misting of the plant with water to keep it hydrated until the roots come back to full...

It seems to me there are a couple things going on, none of which appear detrimental. There doesn't appear to be any disease or pest issue present. I would guess it's a combination of too much...

Does not appear to be a hosta, but it looks more like a young Canna/Ginger type bulb popping up .

A closer photo of first five inches the stem will give a better clue.
Or a photo of the bulb will...

I am gonna guess cannas. They should be dug up in the fall and replanted in spring, but sometimes they survive mild winters.

Congrats looking good. I started my seeds in October or so of 2015. Most came up in 3-4 months. In April or so I threw all the seeds in pots of sand outside in the weather. They are still popping up...

I always pot them up as soon as they pop up. You break roots easier if you wait. I put them in a solo cup with a zip lock bag on the top. Just keep humidity high while they are small.
