Just picked up a Glenn mango and it has a serious curve above the graft. I hesitate to get too aggressive before letting the graft toughen up in the breeze for a few weeks. I'm out of my league with this one, I'm used to bending certain plants as needed not straightening. FYI Tempe AZ Lowes has a bunch of bananas- 4 different, guavas- 4 different, mangoes 2 different, and a bunch of other tropical goodies.

budding often produces a strangely shaped trunk at the union

I have a particularly ugly peach with the bud at a 45 degree angle. When planting I split the difference with the root stock leaning south 22.5 degrees and the top leaning north 22.5 degrees.
I leaned the top north so the sun could pull it back south. Phototropism and all that.

Roots know which way is down, and the top knows which way is up.
After 2 years it's nearly straightened itself out.

Think in terms of 2 years. First, get your tree strong enough to send out enough new branches...secondly, prune to shape.
