Benefits
Carambola is rich in antioxidants, potassium, and vitamin C; and low in sugar, sodium, and acid. It is also a potent source of both primary and secondary polyphenolic antioxidants.[8] Averrhoa carambola has both antioxidant and antimicrobial activities. Scavenging of nitric oxide (NO) by the fruit extract is dependent on concentration and stage of ripening. Extracts showed antimicrobial activity against E. coli, Klebsiella spp., Staphylococcus aureus, and Pseudomonas aeruginosa.[9][10]

Risks
Carambolas contains oxalic acid, which can be harmful to individuals suffering from kidney failure, kidney stones, or those under kidney dialysis treatment. Consumption by those with kidney failure can produce hiccups, vomiting, nausea, and mental confusion. Fatal outcomes have been documented in some patients.[11][12][13][14][15][16]

I had some in Costa Rica that I pulled off of a tree. They were actually quite sour, even when ripe.

You didn't need to wear your "I am a tourist" t-shirt that day.

Carambola are not true to seed and a tree not grafted would have no expectations
of being anything other than sour, but are ideal for use as an ornamental in public areas.

I started with 6 different grafted varieties and my favorite has a large fruit that is
very sweet when green and amazing when ripe.

A $6 grated tree in PR normally comes with fruit on it.

There are two that I like in Florida above all others. Fwang Tung and Sri Kembangan. I think most of the Florida industry is devoted to Arkin.

I got a small Fwang Tung (about 3 foot) air layered from a friend last year (her tree is loaded with fruit right now), it set two fruits low on the tree that got to pretty good size before the puppy decided to get them. A couple months ago I got a "unknown" carambola (scraggly looking about 4 foot) from one of the neighbors who got it from another neighbor a few years back. They said that it put out really good fruits, but they had no plans to put it in the ground or re-pot it (which it really needed), so they gave it to me. When I was re-potting it, I found the broken of tag from the tree in the pot, it is a Kari.

The FT is going crazy right now with flowers (and looks like a pretty good amount of fruit sets, about 1" long), the Kari is getting used to the new pot and just starting to push growth and some flowers.
