Plantain Mozzarella Cheese Stick
 
Ingredients:

2 ripe plantains, peeled
1 tablespoon heavy cream
1/4 teaspoon salt
6 oz mozzarella cheese, cut approx in 2x0.5x0.5 inch sticks
1/2 cup bread crumbs
oil for frying
Preheat the oven to 350°. Wrap the peeled plantains in foil and bake them for 40 minutes or until soft. Cut the plantains longitudinally through the middle and remove the seeds. Mash them with a potato masher and mix with the salt and cream. Take a small amount of puree, about 2 tablespoons, and flatten in your hand forming a disc. Arrange the mozzarella stick in the center and cover completely with the puree. Cover with the bread crumbs and fry until golden brown, about 2 minutes each side. Thank you

VERY interesting! I am definitely going to try this one! Kind of like croquetas. :)
