Default Plantain Mozzarella Cheese Stick

Ingredients:

2 ripe plantains, peeled
1 tablespoon heavy cream
1/4 teaspoon salt
6 oz mozzarella cheese, cut approx in 2x0.5x0.5 inch sticks
1/2 cup bread crumbs
oil for frying
Preheat the oven to 350. Wrap the peeled plantains in foil and bake them for 40 minutes or until soft. Cut the plantains longitudinally through the middle and remove the seeds. Mash them with a potato masher and mix with the salt and cream. Take a small amount of puree, about 2 tablespoons, and flatten in your hand forming a disc. Arrange the mozzarella stick in the center and cover completely with the puree. Cover with the bread crumbs and fry until golden brown, about 2 minutes each side. Thank you
