Default Banana Eclairs (cream puffs)

My new favorite recipe, eclairs filled with banana mash

You need a pastry syringe to fill the eclairs...

Eclair shells:

Heat 1 cup water to boiling. Turn down to a VERY low simmer and add 1/2 cup butter. When butter is all melted, turn off the heat, and stir in 1 cup wheat flour. Mix well. The result will look like a sticky creamy pudding. Add 4 eggs, one by one, mixing thoroughly.

Place by teaspoon or pastry syringe onto cookie sheet. The dough will puff up about 2x so leave space between the pieces.

Bake at 400F for 15 minutes, turn heat down to 300F and bake an additional 15 minutes. IMPORTANT, do not open oven at any time during baking or the dough will not puff up!

Eclair Filling:

Make your favorite banana mash I like it with sugar and butter. Make sure there are no lumps big enough to clog the syringe. Use pastry syringe to poke a hole and fill each shell.


To finish, chill eclairs and then dip the tops in melted chocolate - or drizzle melted chocolate over them.

A bit involved, but a good looking and DELICIOUS treat

I don't mind, it's not my original recipe, eclairs can be made with any filling you like
