My husband has a bakery business and has used all of those (and others) except Pitogo. The bread turns out great regardless of the type.

I really like nam wah for bread. It has that firmer non melting kind of flesh, so it holds up well in the bread. I cube it and then mix it in the batter to leave little chunks after you cook it.

I have tried several types of banana in banana bread and all of them work well... Gros Michel did the best in my opinion...

What it seems I actually have: Brazilian, Cavendish, Namwah, Dwarf Red, Gros Michel, Pisang Ceylon, Veinte Cohol and SH 3640, and American Goldfinger. FHIA 1, Paggi and FHIA 17... Always room for one more. |
