Default Start with big or small pot?

Good morning from central Florida (9b)!

I have a few tiny plants coming from a nursery and I have a pot question. Is it better to start out with small pots and continually re-pot as they grow, or should I plant it in its final pot immediately?

The final pots will be a 25 inch wide and 18 inches deep.

I'm not sure how much transplant shock happens with bananas. I recently purchased 2 bananas in 3 gallon pots from nurseries and one immediately started turning yellow while the other one finished unfurling a leaf that was forming when we purchased it and I noticed another one peeking out. That plant stayed green and looks healthy.

Start with a small pot and step up to larger ones as the plant grows. When the plant is larger and growing vigorously it can be put in a bigger pot. Starting in a smaller pot helps with not overwatering the plant and causing it to rot. The small pot also allows easy moves to other conditions in case you notice its getting too much sun or not enough and the smaller soil volume allows for easier correction of less than ideal soil conditions.
