do you eat them elephant ears? because they make great greens if done right. The bananas look great also

love okra, have a few starting right now.
I grow elephant ears for greens because its hard to grow other "regular" greens during the summer here (bugs are horrible) |

How often do you folks water your large banana plants? Do you thoroughly soak or just sprinkle? I noticed mounds of mulch around the banana plants in your pictures. Does that mean you water less often? Can you get away with not watering for over a week in the summer (without rain)?
I'm still new at this and need all the advice I can get. |
