Default Bananas with a jelly-like consistency?

As a spin-off from the regrettably fruitless thread in the banana identification forum...

Does anyone know of an attainable species of banana which produces a fruit with a jelly-like consistency? I may not be able to find exactly what I'm looking for with regards to matching the type of banana I ate in Papua New Guinea, but it'd be fun to try growing something similar if it exists. Ideally I'm looking for something kindof like this...

Nurunuru - can you please give me some directions to find the jelly bananas? My friend James will at least be in the same country, and may happen to be close enough and have the time and guides/translators to go searching.
