Default When & how to harvest

The title says it all - - We have a large stalk of medium to short bananas (about 65 total) that have matured for about 3+ months, the flowers? have dropped off the ends of each banana about a month ago & they seem to be fat enough to harvest. When do we do that? We've been told to cut the stalk above the fruit, take it into a dark place (garage) and hang it until it begins to yellow. Is this correct, and when or how do we know the time to cut the stalk? Thanks in advance -- Retired in Fla!

When they get full and plump, the raceme will get long, and the remaining leaves on the plant will start to turn yellow. It's something you'll get a knack for after doing it a couple times. Some people wait till the upper hand starts to turn yellow. The whole process from first sign of the bloom to harvest can be about 3 months, give or take. It also depends on the type as there's some big variations at times between kinds.
Sounds like yours may be ready to cut and hang. Post a pic!
