I didn't see this posted in any of the forums, and since this will likely be for commercial bananas, this seemed like the best forum.

I'm not sure that I want my bananas covered with this stuff, and I'd hate to see the liability of someone allergic to shellfish having a reaction (assuming that the allergen is in the extract, and that the reaction was severe enough to be triggered by skin contact when holding the banana)
But, it's about bananas... so figured I'd share. Personally, an overripe banana is just a reason to make banana bread.
