Well, you have enough to do both. If it were me, I'd wait for
one of the fruits to turn some color before cutting the bunch down. That way you get the most of the flavor in the fruits without the skin bursting. The lowest bunch will ripen last. So you can even wait for the the top hands to ripen and eat it fresh, while cooking the lower bunches of fruits. Just don't separate the fingers from the hand, or better yet, don't separate the hands from the bunch, until you decide you want them to ripen faster.
