Default First Time Grower Advice Needed!

Hello!!! We recently acquired and planted a decent size banana tree that already had three nice leaves.

Needless to say we had one last frost =(
We tried to protect the plant the best we could but it managed to kill the 3 leaves =(
In an attempt to see if we could save the tree, I cut it back just below the leaves.
The center layers were all still green at that point.
In a matter of minutes the very center core started growing!!! but the outer layers started to dry up =(

This growth has continued!


I am wondering if anyone could please offer any advice!?
Should I have cut the tree back further for all center layers to grow!?
Should I let the tree continue to grow as is??!?
