That would be more like fall into Bonsai Banana technique and not so call "Dwarfing" . You can cut back to 3'- 5' as you like and let it regrown. Take out the old out layer trunk that was cut. It will regrow back to its height, if you like it to make fruit. Do the same thing and put it in a pot as Bonsai and it stay very very small. You got to keep up with removing the trunk layers . No evident yet to prove it will set fruit as Bonsai...You can keep its size control ,but if you like it to set fruit, then you may let it grow back to its original size.. Just like you buy a banana plant that was cut back to fit in a shipping box. After planting for months , years... It will grow back to its original height and set fruit.
