I like to leave the mother stem to provide energy to the keiki. If I can I try to cut the rack at the very top. Then when it gets a bit older it can be pulled out.

Or with a different practice you dig the whole mat out once you harvest, make new babies then replant. This helps prevent disease and bug issues.
