By stem I think he means the part of the hand that joins the fingers together. Notice in the ripe picture how black the joint is, in the green photo the joint is starting to form a black crescent.

I think the trick to avoid this is to eat them now that they are ripe. Maybe snip the fingers off the hands to ripen as loose fruit?
