You won't. Just chalk it up to experience with eBay sellers of plants.

In my own experience, sometimes reflected in the double-blind taste tests at the UCI Field station:
Best white: "Paul Thomson" cultivar of Hylocereus undatus.
Best pink: "Physical Graffiti" hybrid.
Best red(1): "American Beauty" - trade name for Hylocereus guatemalensis.
Best red(2): "Pitahaya roja" - traditional name for Hylocereus ocamponis; the pods are thorny in comparison to other Hylocereus species and the plant is often a sparse bearer, the fruits though are unsurpassed in my opinion.
