Like most things, better when they haven't made a long trip on a boat in cold storage. I have since figured out that you don't wait until they are nearly black like you would with a plantain. Full yellow makes a decent maduro that isn't too gooey. I've had varying reports of how well mofongo works with them. I can tell you that fufu doesn't work with them. I just had some customer's today orginally from Uganda that tell me that the hua moa is like their Matooke banana in texture.
