The Hua Moa is classed as a cooking banana, not a true plantain. I finally got talked into letting a few go full yellow and cut some up on my bkfst cereal. Surprisingly pretty good --- like you say --- sweet peach overtones and a bit tart. Also firm texture. Most of the time I go for twice fried fully green plantains. So much that I can't wait for them to ripen. lol
Tostones with white rice and red beans plus BBQ chicken adobado.
One of the best meals on the planet. Served with fresh watercress salad dressed with just olive oil and salt. Freakin' yum yum yum!!!
