You're lucky! You cut it just above the flower bud. My grandmother cuts the bananas in her yard just so the fruit will be an easy reach. I have always wanted to learn from her when to do it, but I never got to asking her whenever we visit her in the province.

I'd just let that flower keep going. The other plants in the mat will give the flowering plant nutritional support. Just keep at least 2 full p-stems attached in order to maximize the production.
