Probably not an issue if you have a clean plant and growing environment, but I recalled a reason not to eat fresh (native) water chestnuts from a college parasitology class- you can get fasciolopsiasis (an intestinal fluke) from eating raw ones in their native habitat, after that class there were a number of things I wouldn't be inclined to eat/do anymore... just bananas for me!
