I do this pretty much every time I have a pineapple plant and it always works really well. I use the same method as you do but sometimes they are a little more stubborn so I have to dip it in root hormone. I would have a pretty large plant by now if I didnt keep neglecting them! Right now I have one in the ground doing so so and another that has been in a cup of water with roots for about a month (a little too long). I should probably pot it now.
