Default Days to harvest - accurate ?

Has anyone kept records & compared to Sellers claims?
From one site:

So from planting...from planting the seed ? Or the young plant ?
I started some seeds back in March in my sunroom - which gets cold at night
March 24th I moved the 1st seedlings to the greenhouse
I moved my 1st plants outside May 13th

I have several small cukes growing ~1" in size
I'm wondering how long until harvest
Tomato plants have not started to flower yet
Planted peas outside April 25th, germinated & growing by May 6th

I'm keeping better records this year to give me a better idea on planting timelines for next year
