Wow, Martin. Your nursery is awesome! I think your bananas look great. I mean you could trim off all the yellow fronds, and they would look terrific, I think. I am limited in my experience with bananas but not with plants in general, and I don't see one problem or issue of rot or anything on your stems. I could be wrong, but I think your bananas have probably slowed due to the shorter days and longer nights instead of the intensity of the light inside. You could add a grow light with all the spectrum colors if you want to experiment. I had a grow light in my greenhouse one year, and I'm not sure that I saw much of a difference. Anyway, your plants and greenhouse are awesome. I am sure they will all be fine come spring. They are probably loving the protection and humidity of the greenhouse.
